This is so good I’ve made it twice in the last couple weeks. I haven’t bothered to slice the tomatoes in half. The dish still cooks fine, but the tomatoes take forever to cool.
It was my boyfriend’s birthday a couple weeks ago. He doesn’t like regular cake, so I searched Pinterest for the perfect cheesecake recipe.
Things went really well for my first attempt using a springform pan. I felt like the cookie crust needed a little bit more butter. My cheesecake ended up having more of a no bake consistency, so I think the filling could use a little bit more flour and a slightly longer cook time. It also ended up having a really strong lemon flavor, so if I made it again I would use less lemon. That might be a personal preference.
